Winn Dixie Celebrates Passover (April 22-April 30)

Winn-Dixie has once again partnered with kosher celebrity Jamie Geller for the Passover holiday, which begins on April 22, 2016, and ends on April 30, 2016

Geller, coined by The Miami Herald as the kosher Rachael Ray, is ready to whip up fast, fresh family recipes just in time for Rosh Hashanah.

Jamie Geller

Because we know great traditions start with great food, Jamie Geller has developed easy-to-follow, gluten-free, “Passover” and year round recipes to share with Winn Dixie shoppers!

Whether or not you celebrate Passover, all the recipes below are also gluten-free! So they can be used for any household - make sure to check out the Specialty Kosher or Gluten-free items in your local Winn Dixie store!

I will admit, we do not have much time in the morning for a healthy home cooked Breakfast, but I found a few of Jamie's quick and easy Breakfast recipes that I just couldn't pass up!

Of course Jamie Geller does way more than Breakfast recipes, and she has put together a downloadable E-Cookbook with step-by-step recipes here: Winn-Dixie’s Joy of Kosher Passover eBook

This Potato and Cheddar Frittata combines the two best breakfast foods into one delectable recipe. Eggs and potatoes go together like salt and pepper, especially at breakfast or brunch.

Servings: 6

INGREDIENTS
     2 tablespoons olive oil
2 large red potatoes, scrubbed and thinly sliced (about 1-pound)
1 small Spanish onion, thinly sliced
     8 large eggs
     2 tablespoon whole milk
     1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
     1/2 cup shredded cheddar cheese

1. Preheat oven to 375° F.
2. In a 10-inch ovenproof nonstick skillet, heat oil over medium heat. Add potatoes and cook 10 minutes or until beginning to get tender. Add onions and cook 5 minutes more, or until translucent.
3. In a large bowl, beat eggs with milk, salt and pepper. Stir in cheese. Pour over potatoes and onions and transfer to preheated oven. Bake 15 to 18 minutes or until set in the middle. Loosen edges with a spatula and slide out onto a plate. Cut into 6 slices and serve immediately.

This Apples and Cinnamon Quinoa Breakfast is a nice alternative to oatmeal, with the added value of protein found in quinoa. The apples provide a natural sweetness so you don't have to add any sugar.

 Servings: 2

INGREDIENTS
     1/2 cup quinoa, raw
     1 apple, finely chopped
     1 teaspoon ground cinnamon
     Dash of  salt
     1 cup water
     1/2 cup milk, any kind

 1. Bring quinoa, apple, cinnamon, salt and water to a boil in a small pot.  Once boiling reduce to simmer and cook for 10-15 minutes until water is absorbed.
2. Add milk of choice, stir and remove from heat.  Enjoy hot for breakfast.
